- Single certification from AHLEI.
- Duration: 1 year full time

Delivery:
- 3 months of In-house theory and Practical sessions comprising of following:
- A) 60 lecture hour’s theory sessions based on AHLEI Food Production Principles course
- A.1 Introduction Practical – 4 sessions
- A.2 Indian cookery practical – 10 - 12 sessions
- A.3 Continental Cookery – 8 sessions
- A.4 Oriental & International Cookery 10 – 12 sessions
- (Note: Each Practical session is for 3- 4 hours)
- 9 months of monitored practical experience training at a Cambay Hotel Kitchen.
- Evaluation: Theory exam by AHLEI
- Practical Exams
- Log book and assignments based on practical experience training
